Sweet Spring

As winter wanes and spring blooms we naturally begin to turn to lighter foods. No matter the time of year, however, we always delight in our sweets. Here are some easy dessert ideas that are yummy, easy and light:

Strawberry Sorbet made with low-fat buttermilk provides the perfect tang to compliment the sweet strawberries. This dessert uses little sugar; you may wish to add a bit a stevia for a bit more sweetness without adding calories.

Broiled Peach Halves are so easy and require very little oven time. Simply spread canned peach halves, flat side up, on a baking sheet. Sprinkle them with shredded coconut, or a dollop of raspberry preserves or a bit of butter, cinnamon, nutmeg and sugar sprinkles. Broil 3 inches from heat for several minutes, until browned. You may also wish to serve with fresh whipped cream or a scoop of vanilla ice cream.

Ginger Fruit with Sherbet is a wonderful way to enjoy a light fruit dessert with the added benefit of ginger.

Raspberry Pomegranate Jellies are fun and use good-for-you pomegranate juice as a main ingredient. The page also provides a few alternative recipes using pineapple juice or cranberry juice.

Jeweled Grape Terrine is a striking and beautiful dessert! It can be made up to three days ahead of time before unmolding. If you are responsible for bringing something to an Easter brunch, this is a sure winner!
