As the first fruit to ripen in the spring, strawberries are already gracing the grocery store shelves. Strawberries are high in vitamin C and come in at only 55 calories per cup. While strawberries alone are quite scrumptious, here are some other ways to enjoy this lovely red berry.
Strawberry Salad: Toss field greens with sliced strawberries, sunflower seeds, feta cheese and balsamic vinaigrette.
Strawberry Snack: Toss strawberries with lime juice and fresh mint.
Adults-Only Strawberries: Marinate 3 cups strawberries in ½ cup Grand Marnier in a shallow dish for a few hours in the fridge. Spoon strawberries into 4 bowls, reserving marinade. Pour marinade into a jar with ¼ cup heavy cream. Put on the lid, shake it up, then pour over the strawberries.
Strawberry Blender Soup: In a blender combine 2 cups strawberries, 1 cup orange juice, 1 cup vanilla yogurt, ½ tsp vanilla extract and blend until smooth.
Strawberry Tea or Water: Add some fresh sliced strawberries to your iced tea or water for a refreshing drink.
Strawberry Pizza: Warm up a pre-baked whole wheat pizza crust in the oven. Top with goat cheese. Toss strawberry slices and watercress with a bit of olive oil, lemon juice, salt and pepper and scatter over goat cheese. Add some chopped pistachios and freshly grated Parmesan and you have an impressive summer time supper.
